Chicken Taquitos
These baked chicken taquitos are so crunchy and satisfying enjoy them with your favorite toppings and dippers!
Servings: 12 taquitos
Ingredients
TAQUITOS:
- 2 c. shredded cooked chicken breast or rotisserie chicken
- 1 T. taco seasoning
- 1/4 c. salsa
- 1/2 c. shredded sharp cheddar cheese
- 12 street-size flour tortillas
- Lime wedges for serving
TOPPINGS:
- Sour cream for drizzling
- Cilantro leaves
- Diced tomatoes
- Diced avocado
DIPPERS:
- Salsa
- Sour cream
- Guacamole
Instructions
- Preheat the oven to 400 degrees. Line a rimmed baking sheet with foil. Lightly spray with avocado oil cooking spray; set aside.
- In a large bowl, gently toss the shredded chicken, taco seasoning, salsa, and cheese until combined.
- Divide the chicken mixture among the tortillas, roll them up tightly, place on the prepared baking sheet seam side down, and secure with a toothpick. Repeat with the remaining tortillas. Lightly spray the taquitos with avocado oil cooking spray.
- Bake for 15-18 minutes or until crisp. Remove the toothpicks. Transfer to a serving plate and enjoy with desired toppings and dippers.
